Andy,
See the attached screen shot. Under the save-as window, first ensure
that you have activated the button I have indicated with a red 1.
This opens the browser window below (indicated in red 2). If the
desired save-as path in not listed in the automatic drop-down window
(red 4), then drag the desired target folder from the browser window
(red 2) to the drop-down window (red 4).
If you prefer to type the path manually, then just do it--directly in
the save-as bar (red 3). If the folder does not exist, as in my
example screen-shot, OS X creates it for you in the path you typed.
